Borsh: Cooking With Ina and Iris

Borsh. This is for everyone who has been asking what we eat! Try it for yourself- you just might enjoy it! Let me know-

Large pot of water
2# piece of beef
5 medium potatoes- peeled and cut into small pieces
1/3 Cup oil
3 Cups shredded carrots
2 medium onions minced
1 medium beet- peeled and shredded
3 generous Tbls of tomato paste
1/2 large cabbage- shredded
fresh parsley and dill- chopped
Sour cream

Cook beef in large pot of water. When it is fully cooked, remove it and cut into bite-sized pieces- set aside. Add potatoes into the pot of beef bullion. Cook onions, beets, and carrots together in oil in a frying pan. Add salt and pepper to taste. Add tomato paste and cook until carrots are tender. When potatoes are tender add carrot mixture and cooked beef into the pot of bullion. Remove from heat, then add cabbage and fresh herbs. *Do not add the cabbage and herbs while it is boiling because they will wilt. Serve. Top each bowl with a generous dollop of sour cream. Enjoy!
